Thai Chicken Cabbage Soup

3 chicken breasts, cooked and shredded

8 cups chicken broth

2 leeks

6 carrots

1 medium head of cabbage

1/2 cup jarred peanut sauce (any kind works) (or more to taste)(or peanut butter)


Simmer everything but the cabbage and peanut sauce for a while, add the shredded cabbage and cook for 5 minutes, and add the peanut sauce at the last minute, to taste.  Really you can add any other vegetables you have laying around, the recipe is very flexible.
